Just found this online. Making it as soon as humanly possible. I changed the recipe to vegetarian and you can easily make it vegan:
Super Rolls with Avocado Ranch Dip
Super Rolls:3/4 cup drained black beans1/2 cup corn kernels1/3 cup chopped red pepper1 tbsp chopped jalapeno2 chopped green onions3/4 cup shredded cheddar cheese1/2 tsp garlic powder2 tbsp bbq sauce6-7 burrito sized flour tortillasMix ingredients, cut tortillas in half, spoon in mixture, roll tortillas, & cook in 425 degree oven for 10-15 minutes.Avocado dip:1 mashed avocado3/4 cup ranch dressing1 tbsp chopped cilantro1 tbsp chopped tomato1 tbsp chopped onion1 tsp chopped jalapenofew cracks black pepperMix & serve.
